HELP! COOLING SYSTEM PROBLEMS

Ok. After officially pulling whats left of my hair out I have to ask for some help. I have a single turbo, with an Apex power FC standalone. My cooling system is driving me CRAZY .
For no appearent reason my water temp seems to spike RANDOMLY. Not only that but a get a low coolent light and warning also at random and the two problems sometimes run concurrently sometimes they don't. I have already popped one engine due to the infamous piece o dong water pumps they put in FDs and am on my 4th in 13 years. 3000 miles ago I replaced the water pump and thermostat yet again. I don't get to worried when the factory guage says I have low coolent or the temperature guage spikes for SHORT periods of time and then returns to normal. However, I start to get REALLY worried when the apex indicates the temp is over 100C for extended periods of time.Tonight I got the perfect storm, temp goes from 81C to 121C (a new high) within 4 blocks and my low coolent light comes on. Thinking I have lost yet another water pump I stop the car. 10 hrs later I go back with a bucket of water and a flashlight.I pour less than a pint of water in the engine and check the coolent hoses. Seeing that the car is NOT low on fluid a say a prayer to the rotary gods and start the car. After about 5 min the idiot,"stock" gauge does not indicate ANY problem. THe Apex indicates 81C, so bravely I get into the car and drive it approx. 10 miles home. I got a low coolent light for about 45 sec but otherwise had no problems. No scary water temps from the apex. No temp needle pegging from the stock guage. The hottest water temp recorded during the trip was 92C I believe. I don't get it wtf!!!
Ideas? plz help
only other mods that I think may be relative or that my current engine was built by Peter Ferrell and has about 30k on it and I have a none stock water return system. I believe the resevior set up is a little different.

Sounds like you have air in the system. Those crazy temps swings are what I have gotten when I changed motors or radiators and just put in coolant. After a number of heat/cool down cycles the air works itself out of the system.
